Dalhousie Castle is a fortress fit for a king or queen with blissful spa facilities, 2 Rosette fine dining and 35 beautifully appointed bedrooms. Standing within its own 11-acre parkland estate on the banks of the River Esk, 8 miles south east of Edinburgh, our 13th century castle is a truly enchanting place to start, develop or progress your career in hospitality.

The Robert Parker Collection includes four specially selected properties, located in magnificent surroundings, offering our guests a luxurious experience in a home away from home. Our properties are located in Edinburgh, the Scottish Borders and Northumberland.

Commis Chef salary from £10.50 per hour

Full time or part time hours

We have an exciting opportunity for a Commis Chef to join our acclaimed kitchen team. You will be passionate about food and committed to going the extra mile for our guests, taking pride in our brand service values. The ideal candidate will be self-motivated with excellent time management skills, will work autonomously and as part of a team and must be able to plan and prioritise their workload. Previous experience within an AA rosette kitchen is desirable.

The primary purpose of the job is to always provide excellent standards of food and consistent service to maximise customer satisfaction.

Main Tasks & Responsibilities

  • Work with the Chef de Partie on any kitchen section to the required standards set by management
  • Assisting in the food preparation process
  • Cooking and preparing elements of high-quality dishes
  • Preparing vegetables, meats, and fish
  • Assisting other Chefs
  • Helping with deliveries and restocking
  • Assisting with stock rotation
  • Cleaning stations
  • Contributing to maintaining kitchen and food safety standards.

Chef de Partie –  up to £27,500

Working straight shifts up to 52 hrs a week

We are looking to appoint a Chef de Partie to join our kitchen team of eight delivering outstanding cuisine in our two restaurants and busy function outlet. The role will involve delivering food to company standards, maintaining and rotating stock levels along with business on books, maintaining a high standard of hygiene in both personal and work area and following all food safety procedures. You’ll have the opportunity to bring ideas to the plate to further advance the food offering at the castle. We are looking for someone who works well as part of a team and strives to help others and with experience working in a busy kitchen.

We are recruiting for an experienced Beauty Therapist to work in the Aqueous Spa at Dalhousie Castle.

Our spa therapists are the face of the spa, communicating with different departments and guests alike, ensuring a smooth and memorable experience. The successful applicant will have previous experience in a high volume and high standard similar operation, hold a Beauty Therapy SVQ Level 3 or equivalent qualification and possess excellent massage and skin expertise skills. You must be confident, professional and able to work on your own initiative, providing massage, facial, manicure, pedicure and waxing services to the highest standard, adhering to all company policies on health and safety. The role also involves assisting the Spa team with bookings and appointments scheduling, providing additional administration support if required, answering client calls in a polite and friendly manner and promoting the sale of branded products where appropriate. We are looking for someone who will deliver the highest level of customer service at all times – with warmth, respect, informality and professionalism.

We have a fantastic opportunity for an enthusiastic individual to join our team as a Food & Beverage Assistant. FOOD & BEVERAGE SUPERVISOR

Salary: £12.32 per hour

Reporting to: Food & Beverage Manager

Hours of work: Full-time

Responsible for overseeing the smooth operation of the food and beverage operation and assisting the Food & Beverage Manager in ensuring we are consistently improving our standards and ensuring that all sales opportunities and relevant cost controls within your department are maximised. The ideal candidate will have previous experience in a high volume and high standard similar operation at a supervisory level and possess excellent organisational, communication and interpersonal skills to support, and work with others from different parts of the hotel.
