SENIOR & JUNIOR SOUS CHEF

The Robert Parker Collection includes six specially selected properties, located in magnificent surroundings, offering our guests a luxurious experience in a home away from home. Our properties are located in Edinburgh, the Scottish Borders, Northumberland and the Lake District.

Dalhousie Castle is located in Midlothian Scotland, near the town of Bonnyrigg, just 8 miles from Edinburgh’s city centre.

We have a fantastic opportunity for a Senior Sous Chef and Junior Sous Chef to join our team.

The above positions have a crucial role in supporting the Head Chef to deliver exceptional food quality and service to our guests.

The successful candidates need to have attention to detail, passion and enthusiasm for cooking quality ingredients. The ability to work as part of a team and help motivate your colleagues in order to achieve success. Experience in a similar role is essential.

Who we’re looking for:

  • This role may suit either an existing Chef at the appropriate level looking for a change. The ideal candidate will be someone who:
  • Has the ability to work well under pressure in a fast-paced environment
  • Is a team player and has the ability to liaise closely with other departments to achieve customer satisfaction.
  • Demonstrates excellent standards of work and attention to detail

Hours are spread 5 days over 7 and include weekends.

PASTRY CHEF

Dalhousie Castle are currently recruiting for a Pastry Chef. Reporting into the Head Chef the main duties of the role will involve the daily operation of this section of the kitchen, which serves two restaurants and events space for up to 100 people. Complying with all relevant food safety regulations and company policies in relation to standard procedures.

We’re looking for an individual experienced in Rosette dining, with 5-7 years professional history in such a role. Someone capable of organising and prioritising their workload to ensure efficiency of service, whilst meeting the expectations of our guests. Having the ability to communicate effectively with other members of the kitchen and front of house team is important to achieve and maintain our reputation as an award winning establishment.

This position will have a working shift pattern of up to 55 hours per week, 5 days over 7, including weekends and public holidays. As part of the recruitment process all applicants will be required to conduct a trial shift to provide evidence of skill-set.

HEAD HOUSEKEEPER

Dalhousie Castle are currently looking to recruit a Head Housekeeper. Reporting into the Front of House Manager. The main duties of the role will be the day to day operational running of the department. This will include daily work sheet preparations for room attendants, stock takes of consumables, inspection of rooms and public areas to ensure company standards of cleanliness & presentation are adhered to. As well as communicating closely with the front desk and maintenance team to facilitate a smooth & enjoyable guest experience.

As a head of department, you will be required to produce rotas based on the demands of the business, along with managing the personnel within the department in regards to training & development.

First stage interviews will be conducted by the Deputy General Manager.

FOOD & BEVERAGE ASSISTANT

Dalhousie Castle are currently looking to recruit a Food & Beverage Assistant. Reporting into the Food & Beverage management team. The main responsibilities of the role will be to the day to day duties of meal service operations across breakfast, lunch and dinner. Including afternoon tea and function/events when required. Complying with the standards & procedures expected of an AA 2 Rosette establishment. The role will involve significant guest interaction so customer service expectations will be a high priority. As well as working closely with the kitchen team and other hotel departments to ensure a smooth guest experience.

This is a shift rotation position, which will require early starts and late finishes including on weekends and public holidays.

We are looking for an outgoing and confident person. Capable of organising & prioritising tasks, whilst providing our guests with the level of attentive service they have come to expect. Experience and knowledge of electronic point of sale systems is useful, but not essential as any training will be provided.
